This Colby is a washed curd cheese. Made in the traditional way of making Colby gives it a sweeter flavor than a cheddar. In this process washing the curd washes the lactose or milk sugar off.
This cheese won the World Cheese Championship in 1982.
3rd place at the American Cheese Society Competition 2010 and 2019.
